Slimming World Chicken Tikka Skewers

Slimming World Chicken Tikka

This is a recipe to create beautifully marinated chicken Tikka skewers. It’s a great twist on a traditional sauce filled curry and makes a lovely Indian dish. Serves 2.

What you’ll need:

  • 2 Chicken breasts
  • 150g/150ml natural fat free yoghurt
  • Juice of half a lime
  • 5 tablespoons of chicken tikka powder
  • 200ml of Passata
  • Handful of mixed peppers
  • Teaspoon of Ginger
  • Teaspoon of Cinnamon
  • Teaspoon of lazy garlic
  • Rice
  • Skewers (optional)

  • Chop chicken breasts into even cubes
  • Place chicken breast into a mixing bowl and add yoghurt
  • Add in 3 teaspoons of tikka powder and squeeze juice of half a lime and mix well until all covered
  • I leave this to marinade all day or overnight in the fridge usually, but if in a rush an hour or so would do, but for best flavour I would recommend a good marinade.

  • Once marinated, frylight a baking tray and place the chicken breast onto Skewers, this is optional, you could just place the chicken on the baking tray making sure it’s well separated.

  • Pour over the remaining sauce mixture,
  • Grill for 20 minutes at approximately 200c, turning a couple of times throughout.
  • Whilst waiting for the chicken to cook, cook your rice.
  • Put mixed peppers into a frying pan with the passata, cinnamon, ginger, garlic and remaining 2 spoons of tikka powder on a low temperature until the peppers are soft.

  • Remove the chicken from the skewers (or from the baking tray) and pour into the pan mixture.
  • Allow the chicken and pan mixture to simmer together on a low heat for a few minutes.
  • Serve. 🙂
